Castlemartyr Resort is proud to begin an exciting new chapter at Terre, welcoming acclaimed chef Lewis Barker as he unveils his first menu for the Michelin-starred restaurant.
From the urban island of Singapore to the rolling estates of the countryside, Chef Lewis Barker’s cooking transforms as his connection to land and locality deepens. This is terroir-driven cuisine. Known for his technical excellence, Chef Lewis Barker now applies his refined skills to produce grown within arm’s reach—letting nature lead, and elevating it with exacting care.
His new menu represents a thoughtful evolution of Terre’s story, celebrating the finest seasonal Irish ingredients through a lens of precision, creativity, and respect for terroir. Rooted in craftsmanship and guided by nature, this new chapter at Terre invites guests to experience the essence of Ireland on the plate.
Executive Chef Lewis said, “my philosophy is rooted in a desire to work more closely with the land and those who nurture it. I’m focused on immersing myself in the surrounding environment — collaborating with local fishermen, farmers, foragers, growers, and dairy producers to create food that reflects a real sense of place. It’s about forming relationships that go beyond sourcing; it’s about letting the landscape and its people guide the direction of each dish.”

About Executive Chef Lewis Barker
Chef Lewis Barker, originally from Leeds, West Yorkshire, began his culinary journey at the age of 15 while still in college. He started his career at Anthony’s, a local fine dining restaurant that ignited his passion for precision, creativity, and the beauty of the dining experience.
At 19, he moved to Australia, where he gained invaluable experience working in two of the country’s most respected kitchens — Vue de Monde in Melbourne and Quay in Sydney. These formative years instilled in him a deep respect for ingredients, a strong sense of discipline, and an understanding of storytelling through food.
After a brief return to the UK, Lewis relocated to Singapore, where he spent nine years honing his craft. He began as a sous chef in several Michelin-starred restaurants before opening his own establishment, Sommer, in 2020. Within six months, Sommer was awarded a Michelin star, making Lewis the youngest chef in Singapore to receive the accolade at just 27.
The restaurant closed at the end of 2024, marking the close of one chapter and the beginning of another. In October 2025, Lewis Barker embarked on a new journey to Ireland to further explore its ingredients, embrace new inspirations, and create lasting memories alongside his family, colleagues, and friends.
